Fish Cakes

Ingredients

Small fillet of haddock
2 medium sized potatoes
Knob of butter
1/4 pint of milk
Splash of oil mixed herbs
Pinch of salt and pepper

Instructions

  1. Peel potatoes, cut in half put on the boil until soft.
  2. Place fish in a pan with a little milk and simmer for five minutes until cooked.
  3. Remove potatoes from the boil and drain.  Add a knob of butter and a splash of milk to the pot and mash the potatoes until light and fluffy.
  4. Flake the cooked fish into the pot, and add a pinch of mixed herbs, salt and pepper. Mix together.
  5. Take a handful of the mixture and roll into a ball.  Flatten the ball with a rolling pin an inch thick.  Do the same with the rest of the mixture.
  6. Place some oil in a pan heat on a medium heat.  Place the fish cakes into the pan and heat lightly browned on both sides.
