LEEK AND POTATO SOUP
Ingredients
1 onion
2 leeks
1/2 lb potatoes
Chicken stock cube
Water
Instructions
- Peel the onion, leeks and potatoes and chop.
- Put some oil in a large pot and 'sweat' the onion and leeks on a medium heat
until soft.
- Place 2 stock cubes in a pint and a half of
boiling water, dissolve and add to the leeks and onion.
- Add the potatoes and bring to the boil.
- Simmer on a medium heat until potatoes are soft.
